How to Make a Cake Flour Substitute

Don’t have any cake flour on hand? It happens! Cake flour really is great for making a perfectly tender fluffy cake, but if you’re out for any reason, you can totally fake it with a very simple trick.

All you need is all purpose flour and corn starch. It’s not exactly the same thing, but it mimics the same proteins, so you’ll hardly be able to tell the difference.

All you have to do is add two tablespoons corn starch for every cup of all purpose flour. I like to weigh instead of measure since it’s easier to be more accurate, so that’s 16 grams of corn starch for every 120 grams of flour. I sift mine when I make it, but you don’t have to. Mix them well and you’re done.

Make as big of a batch as you need, and just measure it like you would regular flour. That’s it! You’re ready to make extra tender, delicious cake.

If you’re a better planner than me, or you use it all the time, you can find King Arthur’s online here:
